Apple PieCosy up this winter with a warm and flaky Apple Pie! As they say, an apple a day keeps the doctor away!

Ingredients:

Pastry:

  • 350g plain flour
  • 175g unsalted butter, chilled
  • 75g icing sugar
  • 1 egg beaten

Filling:

  • 30g unsalted butter,
  • 1.5kg Granny Smith apples, peeled, cored and thinly sliced
  • 1 vanilla bean, split
  • 100g caster sugar
  • 1 lemon, rind grated and juiced
  • 1 tablespoon cornflour
  • 1 egg, beaten, to brush

Method:

  1. To make the pastry, place the flour, butter and sugar in a food processor with a pinch of salt. Process until the mixtures resembles fine breadcrumbs.
  2. Add the egg and 2tbps chilled water, then process until the mixtures comes together forming a smooth ball. Divide into 2 portions, one slightly larger than the other, wrap in clingwrap and refrigerate for minimum 30 minutes.
  3. To make the filling, place butter in a large saucepan and add the apples, scraped vanilla bean and seeds, sugar and lemon rind and juice. Cook over low heat for 6-8 minutes until it starts to soften.
  4. Mix the conrflour with 2tbsps of cold water and stir into the apple mixture. Cook for 1 minute.
  5. Remove vanilla bean, then strain apples and discard the juices
  6. Preheat over to 200°C. Grease a fluted loose-bottomed tart pan. Roll the larger piece of pastry on a lightly floured surface and use to line base and sides of pan. Refrigerate for 30 minutes. Line the pastry shell with baking paper and fill with pastry weights (or rice!). Bake for 10 minutes.
  7. Remove paper and weights and return to over for 5 minutes. Allow to cool.
  8. Pile apples into the pastry and roll the remaining pastry and press on top of the pie, using your fingers to crimp the edges making sure it is well sealed.
  9. Use any excess pastry to make decorative pattern on the lid or grab a knife and create decorate cuts on top of the pie.
  10. Brush top with egg and bake for 25 minutes or until cooked and golden.
  11. Rest for 10 minutes before removing from pan and serving.
  12. Serve with vanilla ice cream for extra goodness!
