When I think about waffles, I’m transported back to sleepy Saturday mornings growing up. Still in my pyjamas, I’d pull out our old tan and brown waffle maker, plug it in and butter it up. A few magical moments later my family was feasting on what felt like the most special of breakfasts – crispy golden on the outside and perfectly fluffy on the inside. With lots of syrup of course!

Back then I couldn’t have imagined the symphony of flavours a waffle could take on, so in honour of all of our seven year old selves, here’s a list of bold and delicious new ways to enjoy our beloved waffles.

Strawberry Waffles with Lemon Basil Cream

This first recipe may be 100% vegan, but you don’t need to be a vegan to understand the appeal of these delicious waffles. The Vegan Cookbook Aficionado has carefully crafted an elegant waffle recipe for us starring some downright decadent lemon basil “cream.” The creaminess comes from a smooth blend of cashews, coconut milk, vanilla and a few other yummy components, because as you’ve probably guessed, this recipe is vegan! Zesty lemon, warm vanilla, cool coconut milk and sweet strawberries makes these waffles absolute winners from all sides of the flavour spectrum.

Maebells is serious about cramming more deliciousness into a waffle than I ever thought possible. It all starts with transforming some hearty cinnamon raisin bread into french toast. But there’s more. A divine cream cheese filling, fresh blueberries and blueberry jam. The result is equal parts rustic and rich. And surprise! These are gluten-free waffles!

Here’s the waffle recipe all of us chocolate lovers have been waiting for. I Bake He Shoots (via BonAppetit) read our collective minds with this chocolaty confection. And don’t think for a second that these rich, dark waffles are over-the-top sweet – they aren’t. These dark chocolate waffles have half as much brown sugar as they have cocoa powder. And they actually feature a surprising ingredient: olive oil. The sweetness comes from how you top it, and I Bake He Shoots decided that butter, maple syrup and warm, melty peanut butter poured on this waffle would bring the sweetness to the party. I agree wholeheartedly.

Completely Delicious’ ingenious creation could just as easily be called Apple Fritter Donut Waffles. Whatever the title, I’m seriously kicking myself for not thinking of this tasty approach to a classic waffle myself. This recipe starts off with a homey apple fritter batter. The batter becomes a soul satisfying fritter waffle and the fritter waffle gets deep fried, transforming it into a golden brown beacon of culinary achievement: the Apple Fritter Waffle Donut. And if you can possibly take any more goodness, the Apple Fritter Waffle Donut is finished off with a deliciously simple, sweet glaze.

Overnight Cider Pumpkin Waffles with Toasted Pecan Butter, Cider Syrup and Spiced Apples

These light and fluffy waffles are yeasted, and that means a little extra forethought in the preparation. And boy are they worth the extra time! Half Baked Harvest pulls out all the stops on this one: apple cider, fresh apples (honeycrisp or pink lady), pumpkin puree, nutty pecans, a great big cinnamon kick, toasty nutmeg, pure maple syrup and a whole lot of butter. What’s not to love in this cozy, ultra comfort-food take on waffles? It’s hard to decide if the toasted pecan butter, cider syrup or spiced apples steal the show. So I won’t. I love it all.

Last but not least, if you’re a lady who appreciates the dreaminess of a creamy stout beer – or one who’d love to take a crack at cooking with beer – you’ve come to the right place. The aptly named “Beeroness” is a beer expert. And she’s got all sorts of beer-infused baked goods under her belt. With this recipe, she’s played on the chocolaty undertones of a stout beer by making her waffle sundae feature a fudge sauce made of a healthy pour of stout beer and luscious dark chocolate chips.
