The Cake Bake & Sweets Show is proud to team up with Le Cordon Bleu, the world’s most famous cooking school, and Callebaut, the chocolate pioneers bringing us the fantastic ruby chocolate, to bring to you the Chocolate Masterclass feature. With live demonstrations from talented Le Cordon Bleu chefs and the highest quality Belgian chocolate on show, the Chocolate Masterclass will be bringing our dessert dreams to creamy cocoa reality.

 

Callebaut has long since been a leader in confectionery around the globe, and their recent cultivation and production of ruby chocolate has really set tongues wagging!

  • Charles Lamai

    Pastry chef from Toulon France. Charles Lamai specialises in traditional and contemporary french patisserie and is a master chocolatier of single origin chocolate. Some of his career highlights include being a chef proprietor of atypic chocolate in Melbourne, judge at Solomon Islands Chocolate Festival, mentored cacao producers in the Pacific Islands, taught masterclass at Solomon Islands women & youth empowerment workshop and judged the Cacao Barry Chocolate Competition in Melbourne.

  • Karin Rechsteiner

    Head Pâtisserie Lecturer from Zurich, Switzerland. Karin specialises in working artistically with chocolate and sugar. Some of her career highlights includes being mentored by Ewald Notter in Zurich, she is the founding Patisserie Chef at Le Cordon Bleu Melbourne, she has judged for the Cacao Barry Chocolate Competition in Mitchelton Winery, Nagambie Australia, and more!
