- Charles Lamai Pastry chef from Toulon France. Charles Lamai specialises in traditional and contemporary french patisserie and is a master chocolatier of single origin chocolate. Some of his career highlights include being a chef proprietor of atypic chocolate in Melbourne, judge at Solomon Islands Chocolate Festival, mentored cacao producers in the Pacific Islands, taught masterclass at Solomon Islands women & youth empowerment workshop and judged the Cacao Barry Chocolate Competition in Melbourne.
- Karin Rechsteiner
Head Pâtisserie Lecturer from Zurich, Switzerland. Karin specialises in working artistically with chocolate and sugar. Some of her career highlights includes being mentored by Ewald Notter in Zurich, she is the founding Patisserie Chef at Le Cordon Bleu Melbourne, she has judged for the Cacao Barry Chocolate Competition in Mitchelton Winery, Nagambie Australia, and more!
