Cool refreshing recipes for a hot summers day, as demonstrated by Nicolette Stathopoulos at Cake Bake & Sweets Show Melbourne.
Ingredients
- Coconut Berry Blast
- 1/2 cup Frozen Raspberries
- 1/2 cup Coconut Water
- 2 tbs Desiccated Coconut
- 1/2 tsp Equal Powder
- 1/2 cup Frozen Blackberries
- 2 tbs Chia Seeds
- 1 punnet Fresh Strawberries washed
- Minty Lime Crush
- 1 Cucumber washed
- 1 bunch Mint, washed and picked
- 2 Limes
- 1 handful Spinach, washed
- 2 cups Ice
- Coconut Strawberry Sorbet
- 250gm Strawberries
- 250gm Coconut Yoghurt
- 2 tbs Equal
- 1 tbs Glucose
- 2 sprigs Mint for garnish
Method
- Wash strawberries, and slice off the top. Place raspberries, blueberries, blackberries, coconut water, 1 tbs chia seeds and equal in a blender, blend until smooth. Pour into a glass and top with left over chia seeds
- Wash and pick the mint, zest and juice limes, place all the ingredients into a blender and blend until smooth. Pour into a glass and top with mint.
- Blitz together the coconut yoghurt, strawberries, glucose and equal. Place the mixture in an ice cream churner and churn until smooth. Freeze for 15 minutes, then scoop into bowls and garnish with mint.
